Delicious Vegan Pumpkin Curry Recipe | Easy Coconut Milk Curry

Ingredients:

  • 2 cups pumpkin, peeled and cubed
  • 400 ml coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup green beans, trimmed and cut into bite-sized pieces
  • 1 tablespoon red curry paste (adjust to taste)
  • 1 teaspoon curry powder
  • 1 tespoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon coconut oil
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • Cooked rice or naan bread for serving
Instructions:

  1. Heat the coconut oil in a large pan or pot over medium heat. Add the chopped onion and sauté until translucent.
